Your old Hornby controller may be of the variable resistance type, which was once standard. Motors at the time drew quite high currents and the resistances used for control were designed to match them. Modern motors are much more efficient and require less current, the Minitrains, for example, only draw around 40-50 milliamps. With an old style controller you will tend to have only two speeds, full or stop.
Any modern controller with a variable voltage output, the Gaugemaster type W for instance, will give good control. However, Minitrains motors are not happy with low frequency pulse control, so avoid the Gaugemaster type HH or the KPC. Minitrains do produce their own high frequency pulsed controller and this also gives satisfactory results.
